
THAI GREEN CURRY SOUP (Gaeng Khiao Wann)

Serves: 1 person
Ingredients:
- 250ml Roi Thai Green Curry Soup
- 1/2 cup (about 80g) Meat (chicken or beef or pork or etc.), sliced
- 100g fresh Thai eggplant, sliced
- 30g fresh pea aubergine, topless
- 1/3 cup Sweet basil leaves
- 6 leaves Kaffir lime leaves
- 1/2 Chilli stalk , sliced
Method:
- Pour Roi Thai Green Curry Soup into a pot. Heat up on the stove to boil around 2 minutes.
- Add meat as you like i.e. chicken, beef, pork, etc. until well done.
- Add vegetables i.e. fresh Thai eggplant, fresh Thai pea aubergine, or young coconut or ash gourd. Simmer for 4-7 minutes or until vegetables is cooked (soft).
- Then add sweet basil leaves, red chilli and kaffir lime leaves and remove from heat.
- Serve Hot with cooked rice or rice vermicelli or Roti
Serving suggestion:
- Add meat or vegetables as you like it or add water for clear curry soup.
